Clear, bubbly with a light yellow color, it pours with a good two fingers of frothy white colored meringue-like head that has fantastic retention and leaves light patches of lacing.
Nice fruity aroma to it of lots of juicy pears, hints of green apples and faint note of canned pineapple.
Fruity forward mirroring the aroma, plenty of apple, pear and pineapple present in the flavor with some light lemon peel notes as well.
Light bodied and semi-dry with a high fizzy carbonation to it but still fairly sweet considering, Ritz cracker malt backbone with a ghostly hint of corn syrup or honey flavor to it.
Good amount of saison yeast notes on the back-end with a spicy clove and szechwan pepper tingle and a vague yeast funk to it that finishes with a moderately bitter, grassy/ herbal hop flavor that lingers gently on the aftertaste along with the mild sweetness from the malt.

650mL bottle served in a small stange. Beer pours pale yellow and appropriately cloudy, with thin head. I get a pleasant, crisp apple aroma off the brew. Pretty fizzy. Not as much mosaic as I'd hoped for. Unfortunately I can't tell how fresh this beer as there's no date on the bottle. Still, it's crisp, yeasty, and enjoyable as a Saison. Would happily drink again.

650ml bottle - mo' Mosaic, mo' good times, as ever was!
This beer pours a clear, pale golden yellow colour, with three fingers of puffy, finely foamy, and somewhat creamy bone-white head, which leaves some coral reef overhang lace around the glass as it lazily subsides.
It smells of dank pine resin, zesty orange, grapefruit, lemon, and muddled tropical fruity notes, gritty and grainy pale malt, some estery yeastiness, and a further leafy, weedy, and floral green hoppiness. The taste is rather dry and crackery pale and wheaten malt, a touch of funky yeast, some still hard to differentiate exotic fruitiness, more plain domestic citrus and pome character, and a solid leafy, herbal, and grassy verdant hop bitterness.
The carbonation is fairly robust in its cheeky frothiness, the body a decent medium weight, and more or less smooth, with maybe the yeast and slight funkiness taking things down a peg or so here. It finishes trending dry, the same jokers from the mouthfeel challenging the remains of the lingering mixed malt day.
Overall, this is a pleasantly rendered, hopped-up Saison, with the guest Mosaic varietal peddling its whims to whoever might take heed of them (so, this guy, then). With no hint of the 14-proof booziness arising at any point, this is thus very tasty, and worthy of checking out, for mostly the first mentioned and singular reason, too many times now.

T - mild carbonation, light body. up front there's floral, sweetness, then the center opens with hint of tartness, wheat malt bits, emerges with grassy bitterness, lingering.
O - if u like mosaic hops, u will like this one, all you can expect from this single variety of hops. worth a try, refreshing, enjoy the massive aroma, the maltiness backbone, hoppiness & butter biscuit lasting.
