Kvass ale with lavender and spicebush – Collab w/ Arizona Wilderness Brewing Co.
Hearth & Field was brewed with our friend Nick Pauley, wood cellar manager at Arizona WIlderness Woodnotes Cellar.
We mashed this Kvass-inspired beer with over 140 pounds of home-baked, sourdough ciabatta, a good grip of Ohio barley, and some Arizona Sonoran Wheat. Crystal hops from Ohio Valley Hops in Maineville, OH went into the boil.
We co-fermented this beer with saison yeast, sourdough starter, and house mixed-cultures, in stainless steel.
Before packaging, we conditioned Hearth & Field on Arizona-grown Provence Lavender, and Ohio Spicebush berries.

Taster at Little Fish in Dayton.
I wanted to mark this one of the style list. I didn't like it at all, but it seems unfair to ding it when apparently it's a style I dislike. Having said that, should the day come when I've had other kvass beers and liked them, Imma change my score.

16.9 ounce bottle, bottled 02/21/25, Batch #1. Served in a Little Fish Teku glass, the beer pours a somewhat hazy dark golden orange color with about an inch off-white head. Head retention and lacing are both good. Aroma is nice, the brew smells like lavender, wheaty malt, some general graininess and a sweet spicy aroma which I assume is from the spicebush berries. I think the taste is similar to the aroma, but there's the addition of some herbal flavors too. Mouthfeel/body is light/medium, it's easy enough to drink and has a good amount of soft carbonation. I liked this one a lot, it's a nice twist on a Kvass and worth picking up!
