Another version of their basic stout pumped full of some sort of syrup. Like it or not depending on your sweet tooth. A variation on drinking a syrup charged coffee, I suppose. Tasty enough, not as sweet as some of the others in this line. Nice pour with a handsome head. High ABV buried in the sugary side of things. Sweet novelty beer, suitable for dessert.

473 ml can from a winter special pack release. Served cold into a beer mug.
Appearance - Dark brown, nearly black, with many fingers of pillowy off white head being poured. Sparse lacing but really good head retention
Smell - Vanilla for sure, some caramel maybe and light roasty notes, but beyond that not much. If you strain hard enough you could find bourbon (maybe?).
Taste - Again, quite sweet, vanilla for sure, something else sweet that might be kind of like marshmallows. Light roasty bits too. Pretty tasty all things considered, but definitely lacking bourbon.
Mouthfeel - Lightly carbonated, pretty slick, seems almost too watery. Finish is average.
Overall - Decent brew, but lacking the bourbon at all and even a suggestion of barrel (although I guess it's not advertised as a BBA stout). Decent enough brew, but if you're expecting decent bourbon notes you won't get there. Relabeled as a vanilla porter this hits the mark nicely.

473 mL can from the LCBO; one of three new dark beers in their winter Signature Series mixed pack. Coded Aug 7 2021 and served barely chilled.
Pours a deep cola brown-colour with coppery red highlights, sporting nearly two fingers of puffy, foamy, beige-coloured head that falls apart within a few minutes' time. It leaves behind a messy coat of webbed lacing, as well as a creamy, frothy collar and some filmy wisps on the surface. Milk chocolate and Nesquik syrup on the nose, with the vanilla also figuring in very strongly; the bourbon is downright faint by comparison, and I'm not getting much of an oak presence at all, really. Very sweet and dessert-like, with hints of booze and cocoa powder.
I could copy and paste that last statement for the flavour profile - it's cloyingly sweet, with the flavourings largely overpowering the underlying stout. I'm getting milk chocolate, chocolate syrup and a ton of vanilla flavouring, with very light hints of bourbon, fudge, chocolate-covered cherry and cocoa. Medium in body, with minimal carbonation and a smooth, slightly slick, relatively flat mouthfeel - and sure, that reads like a criticism, but it actually works pretty well when juxtaposed with these flavours. Still, one tallboy is more than enough for me: it's just far too saccharine to be consumed in multiples.
Final Grade: 3.47, a B-. My biggest problem with Waterloo's Vanilla Bourbon Stout is that there's very little bourbon presence to speak of - I don't even really like bourbon all that much, but if 'bourbon' is in the beer's name, you gotta give me some friggin' bourbon! I'm sorry, but I just don't see the point of 'faking' a barrel treatment, other than maybe ensuring a cheap price tag... and I think most beer geeks would rather pay more for something authentic vs. settling for this. I'll drink the other can at some point, but after that I doubt I'll be back for more. Worth a try if you absolutely love vanilla-heavy stouts.
