473 mL can from the LCBO, one of three new beers in Waterloo's Signature Series mixed pack. Coded Aug 21 2022 and served slightly chilled.
Pours inky black with ruby red highlights; gathered atop is nearly two inches of puffy, foamy, light tan-coloured head that lasts for a little less than five minutes. As it recedes, it leaves behind a couple rings of sticky lace; other eventual remnants include a creamy collar and thin cap. Relentlessly saccharine aroma of caramel and vanilla ice cream, with hints of whiskey, milk chocolate and roasted grains. Smells more like dessert than beer, but it has its charms.
The aroma is in the same vein: creamy, sugary flavour profile with poor balance and little in the way of nuance. Caramel, treacle, vanilla and cream liqueur start things off, with suggestions of whiskey, roasted grains and milk chocolate coming on the back end. Hints of cream liqueur carry on into a sweet, creamy aftertaste with subtle strawberry fruitiness. On the fuller side of medium-bodied, with low carbonation that gently agitates the palate; smooth, creamy mouthfeel that might be the highlight of this brew. Finishing one can is simple enough, but I have little desire to drink more of this.
Final Grade: 3.18, a weak C+. I'd say it's best to treat Waterloo's Irish Cream Stout like a sweet/milk stout, though I'm not sure if there's any actual lactose/cream in the beer - either way, it drinks the same as a sweetened milk stout, and fans of that style are most likely to appreciate this beer IMO. Oh, and of course fans of Bailey's. As for me, the two cans in this sampler pack are enough to last me a lifetime - I liked it better than the Apple Crumble Porter, but it's still a weak stout overall.

Appearance - Dark brown nearly black with a close to two fingers of light tan head. Pretty good retention.
Smell - General roastiness and then an artificial syrupy Irish cream like aroma (something doused with Bailey's minus the near 20% ABV). Decent porter in the background that is overwhelemed by artificial and syrupy nose. But it is an inviting nose. Must be the "natural flavors".
Taste - Pretty sweet and verging on over the top but the syrupy Irish cream is reigned in just enough to make this enjoyable for a second can. A little bit of bitterness here and there keeps things more balanced.
Mouthfeel - Medium bodied, lighter than average carbonation, Fairly smooth going down
Overall - A bit too sugary and sweet and infused with Irish Cream flavoring, but still quaffable and a decently enjoyable winter sipper for those enjoying the dessert beers.

Pours pitch black and headless. Perhaps hints of Irish Cream liqueur on the smell and the taste, but hardly any. There is a strange sweetness however. Nice idea, but not for me
