all of the beers i have had in this impressive series of berliners have been fantastic, but this one might be at the very top of the heap for me, a dry hopped wood aged mixed culture berliner, aged in their cypress wood vessels and featuring huell melon and hallertau blanc hops. pale washed out yellow looking brew, pillowy headed and creamy, but super light, with a uniform frosted haze. aroma is mouthwatering with a clean lacto sourness, a piquant citric acidity, and the fruity hops that bring suggestions of lemon, honeydew, white wine, and guava. the beer is super light, but i can both taste and feel the wheat, which is awesome. its fluffy and soft, and its dry and fresh in the flavor, a nice baseline for the rest of what is going on here. the sourness is moderate, not too acidic to drink a lot of this, its tart enough to be refreshing but its right on. the hops are brightly citrusy and fruity, and really make this stand out. the wood profile is light and neutral, and its probably the least relevant of the unique features of this thing. i love how its funky too, wild tasting, not just the lacto, really dynamic yeast profile. this is up there with some of the best berliner weiss types i have had from anyone, and reminds me of a more rustic version of something grimm would do, wood aged and dry hopped. outstanding beer here! one of my favorites from a session filled with exceptional beer!
