The base of this ale started out as an homage to the beer that inspired us to start the Noble Star Collection. Alpha State takes that beer one step further with the addition of 6,600 pounds of Montmorency cherries, aged for an additional five months after spending nearly a year in one of our original, 80 year-old cypress wood foudres. Dusty crimson red in color, a tart cherry aroma emanates from the glass atop an underlying spice. A moderate acidity showcases the cherry tang and almond flavors that mingle together, balancing over a toasty malt backbone, and finishing with a lingering sour, yet sweet, cherry zest.
Medium-bodied, Alpha State is unfiltered and bottle conditioned to allow the flavors to continue to develop and evolve in the bottle. Drink this bottle fresh and chilled to enjoy the bright fruit character of this unique interpretation of a Berliner Weisse in a pokal glass or champagne saucer.

750 mL bottle. Deep red and clear. Small brown head. Smells of tart cherries and vinous acidity. Light wood and grain. Tastes of jammy cherries and a touch of woodiness. Light grain. Cherry sourness. Medium body. Well carbonated. Nice.

On tap. White head. Murky rhubarb purple color.
Lots of cherries all around. Some almond notes. Has an odd off flavor that I can’t pick out. Tart. Ends with sweet cherry notes.

Unfiltered cloudy, crimson red colored body. Quick burst of fizzy off white head upon each pour, which disappears right away. No lacing.
Aroma of cherry, cypress wood, almond, and malt.
Taste is sour cherry with a touch of sweet, similar to a cherry pie. Underneath is the cypress wood, almond, and malt.
Medium mouth feel, with fizzy carbonation.
Moderately sour, with a multi layering of cherry flavors. Quite refreshing.
