basically a grisette as i think of them, a grain focused session saision with a little funk. this was definitely my favorite beer here at cerebral, hands down really. its milky yellow in color, not overly attractive, unless you know what you are getting. nice tall head on it too with nice retention. smells like rye and oats and wheat and some other grains all piled high together, but low enough to keep it a session beer. totally cereal forward in the flavor, i love the malt soup theyve made here. i love the yeast too, more belgian than wild or saison type, but sort of a hybrid of all three. some high tone fruitiness, even cotton candy for a second, but then a white wine astringency and a mild musty funk as it finishes dry and effervescent. its complex but also incredibly crushable. i love this style, and i love the execution here. one heck of a first impression! i could see a bretty mature version of this down the line really rocking, or even a fruited edition, but as it stands, i think its the best beer going so far here at cerebral. cant say enough good things about it, but i am partial to the style. is there spelt in here too? a must try when you go check it out!
