excellent saison, we dont see enough of brett beers without wood, but there is something lovely here about the stainless, how dry and clean it seem to be without the wood, and how the yeast develops really neat fruit and even cereal grain flavors in the absence of the oak it usually rides shotgun with. crazy to see such a clear beer from thee guys, the local kings of the milky looking ipa. golden and sparkling, with absolute perfect clarity, lots of bubbles, and a short white head. aroma and flavor are funky mature brett in a cleaner context than i am used to it, notes of dried mango and peach fade into white wine, cheerios, and lemon zest, but there is no acidity to this whatsoever, and the earthy pale grain base is simple enough that the brett really is the main flavor agent here. light iodine and minerals, dry wheat, champagne elements. its elegant for what it is, easy drinking, and about as dry as beer can get! i think its neat to see the brett work this way without the wood, and i would be curious about a similar beer with other single strains of brett, i think this is a perfect base to showcase the unique features of each. hopefully they turn it into a series!
