A 100% Brettanomyces Foeder Fermented Wild Ale. A favorite annual release, this batch has a solid acid level to complement the Nelson Sauvin hops. The all Brett fermentation provides just enough funk to the party as well.

This beer has a light yeast haze after addition from the final swirl. (SRM 3-4) Its effervescence starts immediately, once the cap is removed and is unrelenting throughout the session. A huge, seafoam head is pure white and long lasting, never having a chance to completely fade. Regardless, thick patches of sticky lace coat a double-walled pint glass.
This one has the full-on farmhouse aroma of Brettanomyces. Lemon rind and herbal qualities are pervasive. Coriander mixes with celery and white pepper. There is a faint skunkiness. Warmth brings out a dusty hay-straw quality.
Printemps is a delicate balance of light bitterness against faint sweetness and tartness. It is very dry and follows the nose. The finish is exquisite, so much so that it becomes the main attraction. The finish brings the herbal spiciness to maximum impact, even producing a light sulfur flavor.
The body is medium to full with a nylon texture that is rough. Alcohol is light and slightly more present than expected. Carbonation has a scouring effect.
This was an exquisite drinking beer on a cool, sunny, mid-summer afternoon. I imagine Printemps would be outstanding on a dry, hot day. It is fortifying without being filling.
