M-43 is designed to accentuate the deep and complex character from the combination of Calypso, Amarillo, Citra, and Simcoe hops. Citrus and Tropical notes of Pineapple, Mango and Grapefruit come through in the huge, yet surprisingly delicate aroma. The flavor backs these aromas with a soft, pillowy mouthfeel. Hop bitterness is not particularly intense, which leads to a very drinkable, juicy IPA even non-IPA fans love. The Haze is not from yeast, but rather from an interplay of lipids from the malted oat and oils and acids which naturally occur in the hand selected Dry hops. This beer is a perfect interplay between top grade malt and hops, MI water and brewing technique which cannot be faked.

See if you can notice the subtle differences between this and our flagship M-43. We used the same malt, hops, and yeast as the original recipe. Then, instead of treating our awesome Williamston water with different kinds of calcium and exactly adjusting pH at every stage like we normally do, we went with pretty much straight Williamston water. The end result was a softer mouthfeel, a little less ‘snap’ at the finish, and the absence of the acidic “twang” that makes M43, M43

A - Pours a cloudy golden orange with a one finger creamy white head. Nice amount of soapy lacing.

S - Aroma is orange, grapefrut and resinous hops.

T - The taste is orange, pineapple, tangerine, grapefruit and piney hops.

M - Medium body with medium carbonation. Creamy mouthfeel with a crisp dry finish.

O - Tastes very similar to regular M-43. There seems to be less acidity and a softer mouthfeel. Very tasty stuff.

16 ounce can into tulip glass, canned on 8/26/2019. Pours opaquely hazy golden/amber/green color with a 2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lasts. Nice dense foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, wheat, cracker, biscuit dough, light honey/toast, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/light earthy hops and bready malt notes; with big strength. Taste of huge mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, wheat, cracker, biscuit dough, light honey/toast, and herbal/floral/grassy earthiness. Very mild pine, citrus peel/zest, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew melon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, wheat, cracker, biscuit dough, light honey/toast, and herbal/floral/grassy earthiness on the finish for a while. Amazing complexity, robustness, and balance of citrus/fruity/tropical/light earthy hops and bready malt flavors; with a solid malt/bitterness balance, and no cloying/astringent flavors after the finish. Lightly increasing dryness from lingering bitterness. Medium carbonation and medium-plus body; with a very smooth, creamy/silky/bready, lightly sticky, and slightly resinous/rindy mouthfeel that is fantastic. Minimal warming alcohol for 6.8%. Overall this is an amazing NEIPA. All around amazing complexity, robustness, and balance of citrus/fruity/tropical/light earthy hops and bready malt flavors; very smooth and easy to drink with the mildly bitter/resinous/drying finish; fantastic soft/silky feel. Amazing Calypso, Amarillo, Citra, and Simcoe profile. Extremely juicy, vibrant, and lightly dank/earthy hops; with a perfectly balanced wheat/oat/malt backbone. Light residual sweetness with lingering dryness. A highly enjoyable offering, and amazing spot on style example as expected. Did not prefer much over the base beer, but it is definitely way softer/silkier fresh. I usually age the base beer for a couple months to get the same effect.
