Old World Experience, New World Expression™
A few centuries ago, life on the farm in the Wallonia Region of Belgium was not laid back until the hands had received ever drop of their daily entitlement to the farm’s seasonal ale. Farmhouse Ale was brewed in autumn and winter months for consumption by farm hands in the spring and summer. Each farm’s brew had its own unique characteristics and taste. Contemporary Farmhouse Ale — commonly referred to as Saison (French for “season”)– represents one of the most complex styles of old-world delights that continues to please discerning palates. Champs Au Sud® is the result of BCBC selected specialty malts and flaked grain mixtures that unite to create our Hill Country farm offering of this enduring favorite. Expect mild tartness and earthy-sweet aromas with only a smidgen of bitterness. Citrus notes prevail and culminate in a very slight sour finish.

Appearance: Hazy golden orange with a small, somewhat coarse head, with moderate retention. The interior of the glass wall is festooned with clumps of large bubbles, the majority below the surface being covered. Small streams of large bubbles drift languidly toward the surface. The lacing is thick and patchy.
Aroma: Grassy hops, nuts, earthy yeast, vie with a little faint sweetness.
Taste: Opens with a dry and lightly sweet note, followed by earthy yeast notes, slight toasted nuts, and a mild pepper note. As the taste progresses, there is some bitter apple rind. Alcohol is largely absent from the taste, but offers a pleasing warmth. As the taste draws to a close the hops offer an herbal and medicinal note, which lingers well past the end of the taste.
Mouth feel: Full, soft and pleasant, with just a slight sting of carbonation.
Drinkability/notes: Very nicely done, a substantial example of the style, it is well that most of us will not have to bring in the harvest, with a few of these at an ABV of 7.3%, that might be challenging. Champs Au Sud would be a fine accompaniment to a holiday turkey dinner.
Presentation: Packaged in a standard twelve-ounce brown glass longneck bottle with a pry-off crown, served in aLa Fin du Monde tulip.
