A blend of Stainless steel aged country beers brewed from spring 2018-summer 2019. The entire batch was then “finished” for two months in one of our new French oak foudres, before being bottled in October of 2019. This is a seriously deep and contemplative domain—displaying notes of earthy lambic cellar, Torino-style vermouth, kumquat, persimmon, orange jello, musky orange peel.

500 mL bottle. Cloudy golden. Smells of heavy oak and wine, earthy brett. Tastes of strong white wine, oak, mushroomy earthy flavors. Low carbonation. Medium light. Dominated by wine. Good, but not Suarez's subtle best.

Held up to the light this is a bright, natural yellow. Out of the direct light it's more of an apple juice color. A finger of fizzy white head that receded to a thin, persistent cap.
Aroma has notes of green apple, lemongrass and orange with a good amount of tart notes.
Taste is different than I expected. Not tart at all, with earthy notes taking the lead supported by flavors I'd equate to mushrooms and what I expect bark tastes like. Definitely some wine like qualities. Very light and easy drinking.

Pours a cloudy golden orange color with a surprisingly dense white head that lingers as a ring around the top of the beer. Lovely looking in my glass.
The nose has a nice amount of funk and is earthy, with a nice amount woody oak and a surprising amount of tart citrus, especially ripe oranges.
The funk isn’t as big on the taste as I’ve experienced in a lot of other beers in this style, and that’s okay, because it really allows the earthy flavor to meld with the oak and the ripe oranges to create a robust flavor profile that doesn’t have as much “pucker” to it, which I really appreciate. Absolutely delicious, IMHO.
The mouthfeel is medium and not quite as spritzy as I normally encounter in this style, which adds to the drinkability, IMHO. This is world class, again IMHO, and probably the best beer I’ve had in this style.

Bright yellow with fluffy white head, good carb notes of lemon and light tartness

Blend of barrels, light and effervescent, apricot, vanilla wafer, lemon/lime, oak, white grapes. Really easy drinking.

this one has a wonderful blend of funky fruit character, grainy and rustic flavor, and a touch of oaky sweetness hinting at vanilla. getting bright pineapple, airy grainy character, lemon/yuzu, grape cotton candy, hints of floral and a slight earthy minerality pairing with grainy character creating this country beer character that is so textbook suarez. overall this one is super delicate, almost restrained due to how balanced it is, but it still has wonderful depth to it. very light level of carbonation, awesome stuff!

This one pours a slightly hazy golden yellow color, with a small head, and lots of lacing.
This smells like tart orange, white wine, wheaty and earthy funk, proto-lambic like aromas, and barnyard.
This is excellent stuff. Up front it's got a bright and vibrant citrusy (orange mainly) sort of punch. As the beer warms, the finish gets dryer and funkier, with some lambic overtones - white wine, barnyard, old lemons, etc.
This is light bodied, crisp and very clean, with a pleasant acidity to it. It's very drinkable.
This is absolutely one of the best entries in the series. I imagine it will age extremely well.
