Imperial Stout with Coffee, Caramel, Himalayan Sea Salt and Lactose
ne of our favorite parts of each subsequent release of Underworld Barista is the continued opportunity to collaborate with our friends at Mountain Dweller Coffee. For every release, we discuss the adjunct profile we're aiming for and they produce a roast for us that aims not only to bring bold coffee flavors to the fold, but to tie together all the flavors from the base beer and adjuncts. As always with this beer, we want coffee to be the emphasis, taking the center of the stage with the other adjuncts acting only to compliment the flavors that are naturally present from the varietal chosen and created from the subsequent roast profile. For this variant, they selected a washed, Columbian bean from the Hulia region and applied a medium roast profile, resulting in notes of caramel, lemon and cherry. With these flavors joining the silky chocolate and subtle marshmallow from the base beer, we rounded out the end with a hint of salinity and caramel to tie everything together.

A: Dark and thick, pours like motor oil. Doesn't raise a head immediately as pouring but develops a moderately tan head slowly.
