For Noema Blend 6, we selected some of the oldest stock in our cellar, combining casks of roast forward stout that have aged 40 months in Balcones Bourbon and Elijah Craig barrels. Right away, we experienced flavors of marshmallow, almond and cacao that brought to mind a 3 Musketeers candy bar. This blend, while magnificent on its own, beckoned for one additional layer to bring everything together, so we acquired some organic almonds, toasted them in house and then infused them into the blend with additional maturation time in the liquid

500 ml bottle into a snifter. Bottled 10/23/23, had 11/30/24.

Pours near black and opaque, thick looking, with a sizzle of foam and some oily smear. Aromas of roasted malt, almond, chocolate, vanilla, some bourbon. The bourbon pushes to the front in the flavor and even more so as it warms. Then almond, chocolate, roasted malt, light molasses and vanilla, light oak. Smooth, a solid full body, appropriately carbonated.

A really solid effort. The almonds truly stand out, which doesn’t seem easy to do. There’s a strong barrel presence and lots of chocolate notes, too. Smooth, thickish and delicious. Really enjoyed this one.

Midnight black with a set of reddish brown bubbles on the edge of the surface. Rustic bourbon barrel with chocolate fudge with almond, with supporting toasted caramel, dark cherry, and a hint of port and licorice. Taste has deep bourbon barrels with dark wood, caramel guides the drinker to a hidden treasure trove of almond, dark cherry, a touch of molasses, big rich dark chocolate, mild vanilla and anise, finished by a tempering roast accent. Feel is warm velvet smooth, somewhat light but not thin at all, elegant even. Really impressive at the intentional elegance on display in the overall drinking experience! New Image has been killing it recently!
