Collaboration with Barrel Theory Beer Company and Pulpit Rock Brewing Company
Pastry Lace is a 3-way barrel blended collaboration with our friends from Pulpit Rock and Barrel Theory. Small format barrels from our friends at Rock Filter Distillery held our batch 500 stout. These barrels were blended with our Barrel Theory collaboration in Willet Distillery barrels . We then blended with our Pulpit Rock collaboration that sat in Few Spirit rye barrels. We conditioned the blend on vanilla beans from Mexico, Madagascar and Tahiti, cocoa nibs from Peru, Ghana and Ecuador, and finally toasted coconut, roasted pecans and cayenne pepper.

Super nice, big pastry. Overall sweet, the peppers are very mild and subtle but pick things up the more you drink it. Barrels are very mild here, missing that a bit. The adjuncts are present otherwise, and the body is medium full bodied. As usual, Forager's pastry stout descriptions sound fantastic but the beer itself leaves you wanting a fair bit more.

Pastry Lace pours a black color, with not much head. Big aroma, very oakey. Flavor is very oakey, hints of vanilla and chocolate, as it warms up cayenne peppers come through. Good body to this one. Overall, lots of flavor, changes as it warms up, sweet, then spicy.

Black color. Coconut floaties in the glass.
Brownie batter, chocolate cake goodness. Tons of coconut. I get the German chocolate cake vibe here. No pepper spice to show. Vanilla sweetness. Fudgy. Full bodied. Warming bourbon. The willet rye spice shows. Oaky. Very well done.
