A new season brings transitions, some familiar, some irregular. Gathering in The Woods is one such experience. Now 100% spontaneous, we age this fruited lambic style on whole local red raspberries and Minnesota grown tart cherries for 3 months before bottling conditioning for 12 months. Aromas and flavors of raspberry chutney and cherry tarts are coupled with dry funk and mild minerality. Pop this bottle with roasted duck, buttered sourdough or vanilla ice cream during a celebration.
