Pours a dark rich burgundy-plum with a transparency consistency. Head is a finger of pale pink foam that is more fizz than foam. It dissipates quickly. Aroma is plum, fig, red grape, leather and molasses with a heavy twinge of lactic sour. Really rich dark fruits up front that break away for the lactic sour finish. Flavor profile is plums, dark fruits, raisins, red grapes, oak and Cabernet wine. While it opens up slightly sweet, the lactic sourness cuts in and slashes the tongue. Right at the finish is a dab of alcohol, heat and rich red wine. It plays to all parts, with the sweet opening, the lactic sour middle and the lightly hot finish. Very complex. Mouth feel is medium-thin with a very still texture that only derives a little fizziness at the onset of the sip. Overall, very complex with lots going on. It's pleasant and works together well, but may be a bit divisive for some.
