Our Saison is crisp and funky, allowing the wild brettanomyces (Wild Yeast) to dry it out. Dry-hopped with Lemon Drop and Boadicia, this is the perfect San Luis Obispo hot summer beer.

Poured from 750 mL bottle into snifter. 2016 vintage.
A: Pours a very cloudy orange yellow hue with 2 inch billowy white head with excellent retention.
S: Super funky and super citrusy! Tart lemon, funky brett, earthy minerals, dry herbs, and some toasted grain in the background. Lovely!
T: Super tart…wow! Dry minerals, tart lemon, earthy and funky brett, and a hint of soft toasted grain. With warming, the soft oak note comes through.
M: Light body. Extremely tart and very dry. Light citrus sweetness. Earthy funk from the yeast dominates.
D: The most tart beer I’ve had in a long while. After the first slap on the tastebuds, the experience settles down. Lovely wild yeast contributions. And the oak aging helps soften it around the edges. Very nice brew!

Dark and hazy body; thin yet lasting head, dense and creamy. Aged peach and apricot aroma; notes of barnyard funk. Sweet and tart flavor; phenolic; ancient orange juice. Heavy body; soft and fizzy; tangy yellow pit fruit juiciness; dry.
Ah, the bizzaro elements of the wild ale! And so enticing when done right...funk and phenols, juiciness and dryness, heaviness with a feathery tickle to the palate. This beer delivers the complexity and wild ass appeal that only a coolship fermentation can bring.

Happy Independence Day!
Look: Pours an opaque golden yellow, a good bit of settling sediment. Beautiful color, very small head of white foam.
Smell: Beautiful aroma, dominated by a nice yeast character. Strong sour notes with coriander and subtle wheat.
Taste: Again, strong yeast with a noticeable woodiness that really balances out this amazing saison. Like with the aromas, wheat and coriander are also found in the flavors.
Feel: Very seltzery, crisp, light body. Definitely a sour to make you pucker!
A fantastic saison, highly recommended if you get the chance to try it.

750 ml bottle into tulip glass, 2016 vintage dating on the cork. Pours hazy golden orange color with a 2 finger dense and fluffy white head with great retention, that reduces to a nice cap that lasts. Nice dense soapy lacing clings around the glass, with a good amount of streaming carbonation retaining the head. Fantastic appearance. Aromas of big tart lemon, lime, peach, pear, pineapple, green apple, papaya, mango, guava, white wine, peppercorn, hay, straw, leather, oak, funk, wheat, cracker, herbal, grass, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy/funky yeast, oak barrel, and moderate pale malt notes; with great strength. Taste of huge tart lemon, lime, peach, pear, pineapple, green apple, papaya, mango, guava, white wine, peppercorn, hay, straw, leather, oak, funk, wheat, cracker, herbal, grass, and yeast earthiness. Good amount yeast/tannic oak spiciness and moderate fruity/lactic tart/sourness on the finish; with lingering notes of tart lemon, lime, peach, pear, pineapple, green apple, papaya, mango, guava, white wine, peppercorn, hay, straw, leather, oak, funk, and yeast/oak earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, oak barrel, and moderate pale malt flavors; with a great malt/sour/spiciness balance, and zero astringent flavors after the finish. Medium-high carbonation and medium body; with a very smooth, crisp, dry, and moderately acidic/tannic/grainy balanced mouthfeel that is great. Zero warming alcohol as expected of 6%. Overall this is an amazing Brett saison! All around fantastic complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, oak barrel, and moderate pale malt flavors; very smooth, crisp, and fairly refreshing to drink; even with the moderate acidic/tannic flavors. A highly enjoyable offering.

A: Pours a hazy pale to medium golden honey in color with moderate to heavy amounts of active visible carbonation rising quickly from the bottom of the glass and faint golden yellow + copper highlights. The beer has a three finger tall sudsy foamy off-white head that slowly reduces to a large patch of medium thick film covering the entire surface of the beer and a medium thick ring at the edges of the glass, Slightly heavier than moderate amounts of lacing are observed.
S: Moderate to strong aromas of funky barnyard + hay-like brett with moderate aromas of tart lemon citrus. Light to moderate aromas of earthy hops, oak, slight vinous notes, and spicy yeast. Hints of grainy + pale malts contributing some light fruit sweetness.
T: Upfront there are light to moderate flavors of pale and grainy malts with a light amount of light fruit sweetness. That is followed by light flavors of spicy saison yeast and slightly stronger than moderate flavors of tart lemon citrus. Moderate flavors of earthy hops and moderate to strong flavors of funky barnyard + hay-like brett with moderate flavors of aromas + slight vinous notes. Light amounts of lingering tartness through the finish.
M: Just shy of medium bodied with moderate amounts of carbonation. Crisp with a slightly heavier than light amount of acidic prickliness.
O: I really enjoyed this beer and found it to be quite complex. Easy to drink with just enough funkiness and tartness but still showing the base saison flavors + aromas as well.
