We are so geeked to share this with you! We took one of our favorite DIPAS and conditioned it on Spanish Cedar to give it a real OG IPA vibe. The result is a nose that reminds you of the juice at the bottom of a peach & pear fruit cup, grapefruit, subtle sweetness with a dry finish. We’re thrilled with how this turned out and hope you dig it.

Can:
A bit of an ugly body with an amber/yellow brown color - like a lemonade-heavy Arnold Palmer. Head is solid and lasts longer than expected for a beer that has dealt with wood (at least as my experience has shown), lacing is decent.
Nose is a floral fruity melange, muted with a slightly earthy, herbal aspect. The nose is not as bright as regular Mind the Hop, but also doesn't have the overripe edge that can get a little tedious. Medium heft and thickness, leaning towards heavy on the heft, seemingly thanks to the alcohol. However, especially when compared to the regular MtH, the muted alcohol is refreshing, as is the drier finish.
The more tropical notes (pineapple, mango) become an accent and compared to the regular, with stone fruit coming through a little more. The wood aging isn't strong, but plays through the whole taste, affecting all flavors. In the end, it's like a lightly fruited tea with an earthy woodiness that comes out up front, and the wood and light cedar spice in back.
Quite different, but equally as enjoyable as the original. Having them side-by-side, I could note the similarities that would not have been obvious to me having them separately.

Poured from the can into a Spiegelau IPA glass.
A real nice deep amber body color, hinting just a little bit of rusty copper as well. Fairly clear with a big bubbly and frothy khaki like head. Chunky bubbles and thick lacing as well, with a good three plus tall head height, and popping retention.
This is a very fun hop aroma with added twists. Hits almost seafood dare I say, with an earthy fishy aroma, mixing with this great soft wood and dust sense. Has a sweet sawmill quality from the cedar, even has a salty quality surprisingly. This is really unique this is going places my nose isn't expecting, and it's cool, but also a little odd.
The palate really brings a lot to the table. Juiced up rich body and flavor of earth and herbs. The woody tones bring a sweet touch that goes from cinnamon to spicy chili powder. Faint touches of caramel and soft cedar wood, with an accented hit of tropical and citrus tones. Wonderful spicy and sweet woody finish that makes me melt. The mouthfeel even has a bit of rough cut feel that makes for lots of pleasure.
This brew just got really better. Very enjoyable.
