Bull Of The Woods is a double barrel-aged version of El Rio, conditioned on double the peanut butter and caramel. This beer aged in bourbon barrels, then unracked and transferred to a second bourbon barrel, soaking in more of the wood’s character. Double the peanut butter of El Rio brings in the taste of a giant peanut butter cup, caramel brittle, chocolate covered peanuts and smooth vanilla.

Impressive label design. As for the beer, it poured a somewhat syrupy, dark brown color that bordered on black. Medium bodied for the style. Slightly thinner than I anticipated for a beer of this magnitude. There was no head, but a frothy, light tan collar encircled the liquid and lasted throughout most of the session.
The aroma was strange. Instead of peanut butter, buttered popcorn came to mind. Caramel coated, buttered popcorn specifically. Rich roasted and caramel malt notes were also apparent. Good dose of vanilla extract as well. Some semisweet chocolate was also detectable. Unfortunately, the barrel character was totally absent.
The flavor profile was pretty mediocre and did not stand out in any particular way. Big malty presence up front. Roasted malts were most prominent followed by sweet caramel malt notes. Buttered popcorn came through next. Caramel and vanilla appeared in the center. Caramel corn perhaps. Big boozy notes kicked in here as well and crescendoed as the liquid moved along the palate. Unfortunately, all the flavor and complexity I anticipated from the double-barrel aging were nowhere to be found. More lingering roast and booze after the swallow.
The mouthfeel was medium bodied for the style. Definitely thinner than I anticipated for a 13% ABV imperial stout. The liquid contained a medium bubbled, surprisingly spritzy effervescence that tuned somewhat creamy and slick on the palate. After a few sips, the sugars in the beer left a slightly sticky film on my lips.
I had no idea that this bottle of Bull Of The Woods was four years old at the time of purchase and nearly five years old by the time I drank it. Unfortunately, it seemed that time had taken a toll on the adjuncts, as the peanut butter came across more like buttered popcorn than any type of nut butter I have ever tried. I really wish that Tavour would stop their practice of purchasing beers that are years old, especially ones that do not age well.
