Maple sap has a fairly low sugar content before it is reduced down into syrup and is sometimes known simply as "sweet water." Because we make small batches, and because we stumbled into about 90 gallons of maple sap, we were able to make this beer completely from the sap for the entire process. The beer is stronger, but the body is fairly light for being so dark, and there is not a lot of residual sweetness. We only made one barrel of this beer, so once it's gone, you will never see its like again! Cheers!

Deep brown, approaching black in color, with a beige head of foam that hangs around determinedly. Sweet and malty on the nose, From the Roots throws aromas of maple candy, roast malt, cold brew coffee, and the slightest trace of clove and vanilla. Medium-bodied and soft on the palate, this dark ale is flavorful, but somewhat hollow. Strikingly bitter with layers of malt character including a strong dark chocolate element and a pronounced burnt toast finish, Enlightenment has brewed a beer that tastes more like an American Porter, even as it seems to want to be accepted into the Belgian family of beers. A drink to sip, and a complement to good food, it wants for complexity and a bit more balance.
