We finally caved in to our palate for sours. Heather is a wild ale, made with a Scottish Ale recipe. The beer was first exposed to a wild yeast strain, and then a separate Scottish Style yeast was pitched to finish off fermentation. The result is a malty 5.7% ABV ale with a considerable amount of residual sweetness and a mild tartness/funk on the finish. Also made with Heather tips (A Scottish Flower). Heather is considered to be a national symbol of Scotland, and wearing a sprig of heather is believed to bring good luck! If you can't have a sprig of heather on you, you might as well ingest some in the form of beer. Cheers!
