A dark saison fermented in a 500l merlot barrel, which gives the beer a wonderful chocolate notes.

On tap at the brewery. Saison yeast, but that’s as far as it goes. Picking up notes of Munich dunkel and altbier, but not enough roast grains. A bit sweet, minor bitterness, but I was picking up mostly malts here. This is a saison by nature of the yeast only, hard to pin this one down.

Draft at the pub a couple times now... Pours mostly clear deep walnut... Khaki cap is only okay but leaves nice drapes of lacing. Nose shows standard fruity esters and some background dry toast... the yeasty notes add a perception of sweetness that doesn't translate exactly to the palate.. but still finishes drier like a saison... Not really getting anything in the way of barrel presence, but I dig the overall approach.. Reminiscent of some of the dark colored Fantômes... I've been pretty impressed thus far with every Barbarian brew that I've had... No exception here.
