One of our favorite things about the Saison style is the world of variety it lends itself to. With this in mind, we present an atypical beer. Noir is a Dark Saison aged in a 500L Merlot barrel with Malbec lees from Telaya Wine Co. Lees are residual yeast cells and other matter leftover from fermentation. The addition of these, along with the influence of the Merlot barrel, creates a rich & full-bodied ale. Hints of chocolate are enhanced by the earthiness and stone fruit flavors of the Malbec. A surprisingly crisp, citrus aroma & flavor cuts through, adding dimension and intrigue.
For the ultimate indulgence, pair the Noir with dark chocolate: truffles and cheesecake are two favorites. It is also suitable for pairing with a barbaric steak, or anything you might cook over a campfire.

Bottle picked up at the brewery a few weeks ago... Had a few great pours, but I wanted to give a singular bottle my attention before typing in a whole review.. Pouring slowly shows a black/dark brown brew with nice ruby highlights when held to a light.
Woody/yeasty notes, dark malt is the big player, but is a bit much even for a Dark Saison.. dark fruity notes remind me of cherries and black plums.. Seems standard for U.S. Dark Saisons... Pretty heavy hitting across the palate.. But still very complex.. There is a TON of stuff going on with this one.. Thicker and a bit carbonic, with nice fruity notes that rescue on the finish... A bit of peppery with warmth and that is the only time the vinous notes really show up.
Pretty solid.. Not too many breweries try for Dark Saisons... I dig the chance to try more.

Bottle share from Toby. Saison body with a bit of dark roast malt backbone. Not a straight up saison, but in line with the spate of dark saisons out recently.
