all the beers i had this time in were super ambitious, which i guess is always the case in here, but this one really stood out to me, a dill gose, real clever on a lot of levels. one is that i think the base beer is very good, technically solid, tart without being overly acidic, and with enough wheaty body to feel fluffy and robust enough to support the extra flavor, a smart build on this, good attention to detail. the lactic pucker is evident but its pretty clean, and with the salt it definitely works like pickle brine in this, i think the acidity is close and i think the tidiness is almost refreshing, definitely a thirst quencher. secondly, i love the dill element, definitely reads like fresh dill in this, right from the garden, fronds and flowers both. if there is cucumber in this, its subservient to the dill, which i also dig, some green herbal character, but not cucumber specific on my palate. the base beer is a sunny colored, frothy headed, and just slightly cloudy, it has excellent carbonation, finishes dry, and the salt element is right on, mineral forward without being objectively salty, drying in the finish too. rather complex stuff, summery, vibrant, the dill is gorgeous, and the ferment is clean. this would make a heck of a red beer too!
