We took our flagship saison and conditioned it on top of the spent sweet and tart cherries used to create our heavily fruited cherry beer, Stabbing Elbows. This beer retains its rustic and funky edge while getting a little color and fruity complexity from the spent cherries.

750 mL bottle. Pours clear orange with a pinkish tinge. Fizzy at first but no head moments later. Smells of French oak, grape must, basement yeast, and acidic cherry. Light cherry, though. Tastes of doughy bread very briefly, turns grainy quickly. Bright tartness that builds. A light cherry flavor lingers. Oaky back end that is dry, chewy, and holds the sourness long into the finish. Medium body. At first, it doesn't seem that sour, but its other flavors are light. In the end, all I taste is the acidity with hints of saison and fruits.
