very cool saison here, these guys are doing some fun stuff. its uniquely hopped, and hoppy for the style, more old worldy but not quite noble to me, definitely not a new school southern hemisphere dry hop, this is more classic than that, just distinct in its own way, and thats not all, the ferment is awesome, really complex and one of those best of both world types where there are clean saison esters of pear and apple and green grape and black pepper, but then also bretty farmy weirdness and tangy citrus forward acidity, its all here. there is some oak on this that gives it white wine notes, and i was immediately surprised by the heft of this, not autumnal in flavor but definitely in feel, a little bigger and slower, very complex so i like the pace it seems to want to move at. i get a ton of nuance in this from birch to sauvignon blanc to elderflower, white pepper, honeydew, fresh lemon thyme, light cheesiness, pine, meyer lemon, and even vanilla, its wild how much is going on here. i love the funk this has, its not too acidic, and i can taste and feel plenty of wheat malt. enough carbonation from the tap, light oxidation in its over ripe maturity, and a long oaky finish, very unique saison overall, partially wild to me, farmy and rustic and well made. cool to encounter this on draft, have not had nearly enough from odd breed...
