(5.8%, 20 IBU) When one dreams of summer, what does one envision? A local round of disc golf. Days at the ballpark or at the beach. Picnics just about anywhere. Hot nights in the backyard or by the pool. Clothing might be sparse or even optional. Sweat dripping off your forehead, only to be chilled by a cold, light, refreshing beer, whose subtle tangy flavor is as surprisingly delicious as it is light and thirst quenching. The thing about Dreaming of Summer, is that it brings you a little slice of summer no matter what time of year it is.

Very tasty, but not a traditional saison due to it's highly hopped character. The hops have a nice fruity quality , so it works... but I see this more as a fusion between a Pale Ale/ IPA, and a saison.

Clear copper color with a 1F head.
The aroma is fruity and spicy, but not strong.

Spicy, peppery MF.

Fruity, spicy taste.

Overall, a good Saison. I would have preferred a stronger aroma, otherwise, the beer compares favorably to the better Saisons.

Review from BeerAdvocate magazine issue #110
(MAR 2016)

Herbal, Fruity, Dry, Medicinal
It seems everyone and their mother has or wants to brew a Saison these days, with most not even understanding the style. Flying Dreams nails it with Dreaming Of Summer though. Perhaps it’s a bit more hop-forward than others, but all of that simply complements the boldness shown by the yeast. Phenols blanket the palate, dry bready graininess serves as the perfect base and a kiss of alcohol rounds this brew out. A lot of attention to detail was taken here, and it’s worth hunting down a bottle or few. [Jason]

Poured from a bottle into the modified tulip glass.
A - Honeysuckle yellow, delicate carbonation caps out with a frothiness that dissipates quickly.
S - Winter grains, rye, spelt, mix with minerals like sulfur, chalk, and aged lemon.
T - Farmhouse yeast esters, a bit of honey, wet grass, solid malts, mixed grain.
M - Soft water, delicate display of grain bill, a bit to soft for the style.
O - A very nice saison, spicy, just enough spice. a very nice offering.
Cheers

Well made saison, everything about the beer was great apart from a sulphur eggy taste I couldn't shake at the end of every sip, hopefully it was only at the tap line I tasted and not a feature of this beer. I'll definitely try it again and visit this brewery (my neighborhood)
