This fruited kettle sour features almost double the amount of Red Raspberry we would normally add during fermentation in our Gose... almost 60 pounds per barrel! We then add salt for balance and character. Pours bright red with a pillowy collar of pink foam.

16 ounce can into tulip glass, canned on 10/18/2018. Pours very hazy dark ruby red/pink/orange color with a 1 finger fairly dense and fluffy light pink head with fantastic retention, that reduces to a small cap that lasts. Nice dense foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy/sour/tart/tangy red raspberries, fruit skin/seeds, lemon, lime, orange, grapefruit, peach, plum, pear, apricot, red/green apple, red grape/wine, sea salt, hay, straw, grass, wheat, cracker, biscuit dough, light toast/peppercorn, lacto funk, and yeast earthiness. Damn nice aromas with great balance and complexity of raspberries, fruity/acidic yeast, sea salt, and pale/wheat malt notes; with big strength. Taste of huge juicy/sour/tart/tangy red raspberries, fruit skin/seeds, lemon, lime, orange, grapefruit, peach, plum, pear, apricot, red/green apple, red grape/wine, sea salt, hay, straw, grass, wheat, cracker, biscuit dough, light toast/peppercorn, lacto funk, and yeast earthiness. Light-moderate fruity/lactic tart/sourness, fruit tang, and light spiciness on the finish. Lingering notes of sour/tart/tangy red raspberries, fruit skin/seeds, lemon, lime, orange, grapefruit, peach, plum, pear, apricot, red/green apple, red grape/wine, sea salt, hay, straw, grass, wheat, cracker, biscuit dough, light toast/peppercorn, lacto funk, and yeast earthiness on the finish for a while. Incredible complexity, robustness, and balance of raspberries, fruity/acidic yeast, sea salt, and pale/wheat malt flavors; with a fantastic malt/tart/sourness and tangy fruit balance; with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tart/sourness and tangy fruit. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, acidic/tangy/tannic, and fairly saline balanced mouthfeel that is fantastic. Zero warming alcohol for 5.5%. Overall this is an incredible fruited gose. All around fantastic complexity, robustness, and balance of raspberries, fruity/acidic yeast, sea salt, and pale/wheat malt flavors; very smooth and fairly crisp/refreshing to drink with the modestly acidic/tangy/tannic/drying finish. Nicely soft feel, and not overly lactic/salty. Fantastic balance of super juicy/jammy berries and lacto complexity; with a nice sized pale/wheat malt backbone against acidity. Mild residual sweetness with crisp acidic/tangy dryness. A highly enjoyable offering, and outstanding spot on style example as expected.
