A multi-grain saison brewed with copious amounts of Citra hops and fermented with a combination of our house saison blend and Brett brux. It was then aged on apricots for a month and then bottled with our house Brett blend. Prince was THE MAN!

Hazy yellow color under a tall, frothy head. Smells of dusty Brett, damp wood, apricot skins, leather, and barnyard hay. Flavor has a welcome apricot sweetness to combat the funk. Flowers, stone fruit skin astringency, hay, subtle earth, and a light lemon tartness. Medium, soft, airy feel with a dry, crisp finish. Funkier in the nose, fruitier in the mouth - well made all around. These guys are only going to get better.

Look: It pours yellow and is a bit hazy. It has a full white head.

Smell: There are aromas of apricots, earthly elements, horse, and leather.

Taste: The flavors are highlight by fruity esters with apricots in the front with a bit of lemon, grain, leather, earth, horse, and spice.

Feel: The finish is dry and a bit tart.

Overall there is quite a bit on funk combine with apricots and fruity esters and a classic dry finish.

Poured from the bottle into a tulip glass.

Creamy bright white top, slowly sinks to a thick half finger head and creamy flat top with fine bubbles always being repopulated. Opaque orange, and slightly peach yellow body color, a clear punch of rising carbonation in the middle. Solid looking brew, very nice top indeed.

Spritzy aroma, of fruited apricot, almost has that peach fuzz like flavor on the nose to it. Excellent matching funky tones, slightlu juicy and dripping. Minimal spice and heat as well keeping some good earthy character. Excellent fruit balance on this saison.

Lovely brew on first sip. Creamy and rich feeling palate on first quaff. Wonderful soft funk pepper and apricot juicy flavors abound in the mid palate. Mild but warm earthy tones and aromas fill the mouth with each gulp. Apricot. Peaches. Maybe even a touch of soft pear.

Real nice wonderfully made saison with excellent fruit character.

Poured into a teku pint. No freshness date.

A- Pours a hazy light amber color with a 1/2 inch off-white head that retains well before becoming a thin ring around the edge of the glass and a cobweb pattern of sheer surface foam. Semi-resilient lacing leaves large clots behind.

S- Solid Brett aroma with some funky barnyard quality. Musty, hay, also has that baby diaper thing going on a bit.

T- The apricot does a good job of complementing the Brett character which is borderline astringent. Also some wheat-ish malt flavor going on, could be pilsner though, not sure. Very easy to drink and quite refreshing.

M- Tangy and bright with medium carbonation and a lightish body.

O- A very enjoyable fruited Brett saison that shows nice balance while still having plenty of flavor. Another quality brew from Zebulon.
