Vieille Provision translates as “old stock” and is used for strong beers that are barrel aged. This mixed field saison spent 4 months in red wine barrels with our house Brett blend and then bottle conditioned for 2 months.
The aroma is all stone fruit, apricots and peaches (even though there is no fruit in it), lively carbonation, some delicate funk. The flavor insists that there is no way this is a 9.2% beer, it drinks like a 5%. Tangy, almost tart with a pithy grapefruit character…hints of oak and funk. Really, really nice!

Close to two finger head, bright white with very good retention, the lacing sticks better than usual for the category as well. Faint glow to the yellow gold hue, the liquid filled with tiny bubbles throughout, churns up the fine particulate so there’s not much clarity to it. The nose has a dryness which creates a certain tautness, white pepper, yeast, sage, tarragon, and a generalized grassiness, only mildly vinous, straightforward peach, apricot fruit scents, overall clean and not all that funky. Full-bodied, the strong carbonation adroitly battles the inclination towards heaviness. Peppery and savory, more brett influence here yet still not all that funky. Clove, lemon peel and green hay with a trace of bubblegum, not as yeasty as the nose suggests. Moderate sourness, green apple to cherry nuances to that apricot, peach base. Smooth and easy drinking, the high level of carbonation ensures a fresh finish.

Nice pale gold beer with a thin disappearing head. A nice mildly sweet smell with Brett, peaches and oak. Nice crisp with a little funk and white wine with some peaches. I like this beer. Nice refreshing and tasty.

Appearance: A slight gusher in the bottle and produces a cloudy honey colored liquid capped by a couple of inches of foam; plenty of lacing
Smell: Herbal, yeasty and bready, with a wallop of funk
Taste: Herbaceous and funky, with a green apple tartness developing; white pepper emerges in the middle, with a boozy finish
Mouthfeel: Medium to full body with moderate to high carbonation
Overall: I have enjoyed almost everything I have tried from Zebulon but I guess I am just not a fan of high ABV saisons as I don't care much for this beer although there is nothing to complain about other than my palate
The new corks for the Zebulon Ales are huge and, unfortunately, are a pain in the neck to extract; this one broke as I was extracting it and I had to use a corkscrew to remove the bottom half from the bottle

Hazy orange-gold appearance teamed up with a sharp brett funky nose. Super smoothly satisfying flavor for a 9%er. The finale is showcased alongside an amazingly pleasant lingering finish.
