Our house saison is in the traditional farmhouse style: 100% local Pilsner and spelt malt, heavily hopped with French Strisselspalt hops and a fermentation with several yeast strains that gets up into the high 80s.
All this produced a beer that drinks like a hoppy Pilsner but is driven by the yeast character and minerality. The only other beer style that is defined by its yeast flavor is Hefeweizen but a proper Saison shouldn’t have the banana/bubblegum of a hefe instead it is white wine like, similar to a minerally chablis.
The real fun with this beer is how it evolves over time. When bottled, we add a small amount of our house Brettanomyces wild yeast. It takes a few months to start working so right now it drinks fresh and hoppy but in 3-12 months it will slowly get more funky. We recommend getting several bottles and drink one every 3 months.

Picked up a 500ml bottle from the Appalachian Vintner in Asheville 8-15-23 for $10.99. No bottling date; consumed 5-15-24. Spent a handful of months at room temps and then hit the fridge for several months.
Beer poured chilled gold with a huge billowy yeast and Brett driven white head that has some great hang time.
Nose has notes of white wine, bubblegum, and white pepper.
Taste is light malt base that is phenolic driven with a touch of bubblegum and white pepper. Also getting some ester driven white grape notes. Finishes balanced with a light touch of black pepper bitterness.
Mouthfeel is light to medium bodied with a nice soft feel.
Overall a fantastic Saison, world class IMHO.
