Built upon a foundation of oats, wheat and barley and then given a juicier attitude with Sabro, Nelson Sauvin and Vic Secret hop, Civil Society rolls onto the hazy scene with a dirtier, more peppery and spicier edge to add a little grit and gumption to the hoppy session.
Pale, slightly muddy and catching the eye with a foggy goldenrod haze, Baby Blue Rolls greets the nose with a bevy of peppery fruit flavors that share citrus perfumes and then a backdrop of tropical, herb and spruce. As a sweeter malt flavor lays a creamy foundation of cereal, starch and shortcake on the early palate, a smoother taste makes first impressions.
But as that curious blend of hops rise on the middle palate, a firm and racy taste of pink grapefruit provides a sour and bitter fruitiness that's backed by both lime and orange peels. As a tropical taste pulls from the citrus, impressions of pineapple, papaya and passionfruit all seem more of their peels than their pulp. Trending bitter with an herbal array of spruce, grass, hemp and hay, the lasting impressions are of more peppery gin flavors.
Medium full, creamy and smooth, the beer's body starts firm and starchy but finishes drying and spicy with more of a stern hop bite than is usual for imperial hazy ale. Still, the starches remain to aid in a smoother balance with a peppery hop afterglow.
