Brewed in collaboration with Rivington Brewing Company in Rivington, England, UK
This is a 100% brettanomyces & lactobacillus fermentation that we aged in oak wine barrels for 6 months before we added 200kg of hand-peeled loquats. The fruit adds an extra dimension to the beer, and it provides some sweetness and an intense fruit factor.
It was brewed with barley, oats, wheat and spelt. We kept hops to a minimum in this beer, registering at 1-2 IBUs.
