Copenhagen 9/5 2026. 37,5 cl waxed and inaccessible bottle from Mad & Vin, Magasin, Kbh. K. A bearded deity with a big wild and fruity hair on a white background on the label.

Pours opaque murky dirty dark amber with a small white head Bubbly. Disappears immediately leaving a fizzy fluid behind No lacing.

Aroma is fairly intense with a sweet fruity odor mingling with a sharp sour scent. Sweet dark grapes, gooseberries and green apples. Touch of vinegar. Acerbic and tart.

Light carbonation. Slightly thick, oily, soft, gently tingling texture.

Flavor is intense with a medium strong sweetness followed by a slightly stronger tart sourness. Aftertaste is tart with a sweet undertone. Finish is dry.

Nice Wild Ale. Tart but with a redeeming sweet undertone.

Dois Corvos Cervejeira "Bachus"
37.5 cl brown glass bottle coded "BA203 1411 1128" and sampled on 22 November 2024

Notes via stream of consciousness: So what is this exactly? It's a beer brewed with added white grape musk from the Antão Vaz grape, and fermented with Brettanomyces bruxellensis in a hundred year old vessel called an amphora. It's poured a cloudy golden body beneath a very short head of white that disappeared almost immediately. The aroma is fruity like apple cider, and there's plenty of Brettanomyces character including some leather, wet straw, and a hint of something metallic. On to the taste... it's similar to be sure but with additional notes of white grape, white wine, straightforward and lightly sweet and grainy malt, and a touch of apricot. The Brett character remains very much the same as you find in the aroma, but fuller of course. It's not at all bitter but it's tart, not excessively sour, and quite refreshing. It's very much like a blend of white wine and golden ale with the Brettanomyces dominating. In the mouth it's medium bodied and gently crisp. I find it quite impressive but I'm also a huge fan of Brettanomyces and I doubt that most people would find it so easy to drink.
