Double IPA brewed in the same vein as all our DIPAs...then refermented with a healthy pitch of Brett C.

From the 32 oz growler filled yesterday at the tasting room. Brewer says this is "refermented" with Brettanomyces Claussenii, which is supposed to have a more subtle flavor than some other strains. In any case, this brew has a distinct aroma of that fruity and odd yeasty stuff we call Brett. It's also aromatic with lime, papaya, and fermenting pineapple.
Flavor is warm and malty. Somehow the Brett taste keeps the hop bitterness in the background. Appearance is "awesome," with a fine white foam on the golden yellow brew poured in the tall Maredsous goblet. I think this is what DIPA science has been waiting for. Utterly drinkable, pleasantly sweet, and so flavorful, not to mention the creamy carbonation.
I have had so many interesting beers at Structures. It's a great addition to the diverse beer scene in Bellingham. What town that size has more variety in it's breweries?
