Overly Dedicated is our dry-hopped mixed culture Saison aged in oak barrels. Brewed with Malted Red Wheat from Valley Malt (Hadley, MA) and Cascade hops from Four Star Farms (Northfield, MA). Featuring bright aromatics of tropical fruit, citrus peel, and spring flowers. Further complexity is developed through refermentation with Brettanomyces, Lactobacillus, and Pediococcus in French oak, prior to being dry-hopped with a blend of our favorite hops from the Southern Hemisphere.

Poured from a 500 mL bottle into a stemmed glass. This was bottled on 03/22/2017.

A: pours a vibrant golden/blond and leaves a fluffy white head of a couple fingers that hangs around for a while.

S: Super funky, barnyard, pineapple, grapes.

T: That barnyard funk, green apple, yeasty, pineapple, pear, slightly dry finish. Very drinkable.

M: Light, creamy body with a light to medium carb. Finish is a little dry.

O: Nice and refreshing. Lots of brett influence. Tropical and funky. Very enjoyable.

Poured from an undated 500 ml bottle into the test glass.
A - Opened with a slight hiss, poured gently yields a thin cap of white froth, the carbonation is steady a beautiful to watch. Straw colored with a slight haze.
S - Earthy grains, mingle with some lemon zest, a touch of honeysuckle.and green grape.
T - Following the nose well, add a very nice mineral touch. Tangerine and dried pineapple .
M - A bit slick on the palate, with a beautiful sweet wave followed by a shift to the tart side. Finish is clean
O - A very good use of the mixed culture, not to funky, wonderfully balanced.

Light amber, a good one inch head. Definite grapefruit along with a little vanilla. This is almost Champagne like. My thought is a great summer beer.

500 mL bottled on 03/22/2017. Pours a light straw golden that is opaquely hazy, with a nice foamy white head of one or two fingers. Smells a little bit of what might be oak barrel along with some fairly fresh funk. Taste is a little funky, green apple, a little tart and dry, some oak which lingers in the aftertaste. Mouthfeel is nice, medium carbonation, refreshing. Overall, a pretty good saison. I actually think it might have been better without the oak aging, or less of that.
