Clear golden with a nice white slight head, nice columns of carbonation. Smell is fruit peachy and vinous. Taste is slightly tart, peach and apricot, a little oak. Feel is refreshing, somewhat juicy, carbonation not so noticeable in the mouth. Overall, this was an extremely pleasing brew, so perhaps justifies its very high price.

Poured from a 500 ml bottle, no bottle date, but a recently released offering, into the test glass.
A - Goldenrod colored, very nice clarity, the tiniest spheres create columns on the inside surface of the glass. Reminiscent of Champagne. A thin rings of white is supported by the carbonation.
S - A dusty fruit bin here, apricot, peach, along with Bosc pear. Then fine light toasted oak, a hint of Chardonnay and a touch of dusty funk.
T - Follows the complex nose quite well, Add to that mix a delightful grain bill, wheat, primarily I would guess. Candied lemon, some nice white peppery spice is hidden in the flavors as well.
M - Surprisingly soft on the palate, a semi sweet start quickly turns a bit tart, the finish has a nice minerality before a delightful dusty almost ashen conclusion. Wonderful.
O - The base grisette is a delight that has been elevated to a new place, The mixed cultures are in near perfect balance. Not to tart, not to funky. The stone fruit is proud, but the oak treatment acts to thread this all together.
A delightful offering from very talented brewers.
