Overly Dedicated is our dry hopped mixed culture fermented Saison. We first fermented in stainless, then transferred to wine barrels for a rest with a blend of mixed cultures, then returned to stainless for a dose of our favorite Southern Hemisphere hop varietals, Galaxy & Motueka before packaging. Naturally conditioned, this beer is light, effervescent and complex. Bright citrus aromas nestle alongside oak tannin, tropical fruit and herbal notes with a bright tart finish. (2018 vintage)

From a 500ml bottle, undated as best I can tell. Served in a tulip.

Pours a bright and cheery sunshiney, lemony gold, lightly hazed, and with a scant finger of fizzy head. Little retention to speak of, just a fizzy, foamy, bubbly cap. It is a pretty beer.

Smell is light, bright, tart, flowery and funky. Lemons, lemongrass, lilacs and mildew.

Taste starts out pretty much in line with the nose except that the barrel character becomes evident. This is one of the odd cases where it’s hard for me to separate taste from feel because the lemony taste is associated with a certain soapiness and the bacteria and oak barrel are linked with, and expressed through, a particularly slick and slippery feeling. Mildewing carpet, pineapple syrup, and a floral, perfumy character which becomes almost oppressive, like having your face stuck in heaped flower arrangements on top of the casket and held there against your will while you thrash in vain...

Well, that was unkind. Sometimes we just get carried away. I think this would have been a very pleasant bright and lemony medium-bodied saison without the barrel aging.

Going with this version despite seeing two different ABV's with two different beers. My bottle says 5.8.
This was poured into a tulip.
The appearance was a bright semi-cloudy to subtle transparent yellow color. A soft finger's worth of mellow foamy head glistened gently and dissipated to leave some fine semi-foamy lace somewhat in rings yielding gently towards some rings.
The aroma embraced a pure natural cherished lemon verbana/pulpiness, subtle grassy character, sweet oak, subtle yarrow, and some clean sweet herbal nuances on the back end.
The flavor takes off to reach great heights of sweet and tart sticky character and having a fine dry hopped bit of a grassy edge. Extremely light in its vinous quality. As in the aftertaste, a subtle sweet lemon to yarrow herbal and semi floral bit comes out.
The mouthfeel was almost medium bodied, as it seemed to sit just a touch under. A wonderful sessionability talked about how I could gulp this if I wanted to. Good carbonation, I did notice in the beginning a subtle pop of the top yielded some foamy goodness, but I caught it all and nothing was wasted. Mild stickiness in the finish with some green apple sweet and tart character.
Overall, a very nicely done barrel aged saison. Honest Weight does well to send their goods up here to Vermont.
