Alternate Ending is a special one. First we brewed an ale with German Pilsner malt and Malted Spelt from the folks over at Valley Malt in Hadley. We hopped it with Mosaic and fermented it with our house Saison strain. Post ferment, we blended in about 15% by volume of mature, tart barrel aged Saison, and dry hopped it with more Mosaic. Alternate Ending is inspired by historic Biere de Coupage, where bright young beer was blended with older, more mature beer (often Lambic) to add depth and complexity. Alternate Ending is filled with lemon peel and tropical aromatics, bold fruit and cut hay in the flavor and a short mineral laden finish. By turns both bold and straightforward as well as deep and complex.

Various malted golden grains, harvested locally has a bright and hazy gold color. Wild yeast cultures from mature barrel's mixed with dry-hopped Mosiac flowers gives birth to this complex, sour and yummy Saison.
This is a seriously creative effort that achieves many things, the most impressive being the wild, tangy, metallic and sour yeast kick.
Golden grains and crispy pilsner malt is an easy pleasure, subtle dry hop tones with the beastie yeasties make this exceptional.
