Pours slightly cloudy golden with a creamy white foam head. Notes of sour zesty lemon, tart kiwi, apricot, white grape skin, acidic white wine, complex funky oak spice, hay, slight vinegar, raw spelt, some bready malt, with floral earthy herbal hops. Feels lighter medium bodied, creamy and crisp with moderate carbonation. Overall a nice wild saison brewed with spelt and aged in oak casks.

My first trip to Trillium in Canton was a memorable one. The vibe, selection and atmosphere was pretty great.
Lineage Spelt was my wife's choice of take-out beers. Thanks babe!!

A slight wintery haze within the light golden liquid is eye candy. A soft and light, white foam seems very active, settles down fast, only scattered, thin coverage now exists. Still, this is classic for a wild ale payed down on oak cask.

Not exactly sure what Spelt smells like, but the earthy based aromatics and natural, herbal graininess is very aromatic. Smells like summer wheat and wet corn fields . Sour fruit candy, sweet wild berries crushed up on some high elevation mountain trail. Neat aroma. The oak/vanilla, old wood effect from the oak cask is off the charts.

First off,the flavor has a bold and brash, sourness. Metallic, grainy and tangy fruitiness and serious funk from the wild style yeast. a very flavorful funk, complex and groovy effect from the brash amounts of spelt, that delivers amazing complexity in both malty tasteband texture effects. Dry...dry feeling and dry earthy grainy stuff floats all around. Soouur...yes. Wild yeast complex and zippy, dry mouthfeel makes this thing practically epic.

 

 

This one pours with a clear yellow hue, with a small head and a little bit of lacing.

This smells like super sour kiwi and lemon rind, oak, and earthy funk.

This is quite sour and tart, like a lot of Trillium wild ales for me, but it was perfectly drinkable with a lot of little things going on. There's a nice earthiness here, funky and grainy, with lots of white wine, kiwi, lemon rind, and some white grape.

This is very sour, with a puckery feeling lingering on the tongue after each sip. It's still pretty drinkable, with a soft level of carbonation.

This was just about perfect in the heat, and very refreshing.

Crystal clear, pale golden yellow appearance. The body was topped by a frothy, finger-tall, bright white crown that fell to a thin, bubbly collar. Some streaky lacing stuck along the glass.

The nose was crisp and bright. Big citrus notes. Lemon was most apparent. Some lime too. Touch of sweetness. Bit of Bretty tartness. SweetTarts came to mind. Subtle crackery malt notes were detectable. The sweetness intensified as the beer sat. Some musty, funky, white wine-y notes appeared as well and intensified later in the session.

The flavor was definitely more sour than the aroma. Tart lemon notes dominated. Loads of acidity. Bit of crackery malt sweetness. Some raw wheat too. The beer turned even more sour and acidic as it moved along the palate. Big, tart, acidic, lemon and lemon rind-like notes came through in the finish. Despite the fact that this was aged in oak barrels, I did not pick up any oaky notes.

Pretty average mouthfeel. Medium bodied for the style. The beer contained a moderate, spritzy effervescence. By the session’s end, the the acids in the beer felt as if they were stripping the enamel from my teeth.

Lineage Spelt is another example of a Trillium wild ale that was enjoyable but definitely lacked complexity and balance. On a side note, I would love to see all offerings in their various sour beer series available in smaller format bottles, as the 750s are not only quite pricey but often a chore to finish in one sitting.
