n another exciting collaborative effort with our neighbors at Barrington Coffee Roasters, we bring you a bold American stout infused with cold-brewed coffee. PM Dawn exhibits an earthy, freshly roasted coffee bean and dark chocolate/mocha nose. The flavor profile consists of vanilla, hot chocolate, and caramel along with rich espresso. With a medium to heavy body, luscious mouthfeel, and light bitterness, PM Dawn is balanced and full, smooth with a drying roast character.

This is my last bottle of PM Dawn... luckily I have a can from the mid January batch waiting for me in the fridge.
Pours pitch black with a half finger of light brown head that dissipates to a thin cap and leaves behind sporadic lacing. Aroma has a burst of coffee upfront followed by some milk chocolate and an occasional whiff of alcohol. Taste has a quick punch of coffee followed by tons of milk chocolate and a bit of dark fruits. There is a touch of sweetness in the finish. Medium-full body and moderate carbonation. Overall quite a tasty brew, i think the coffee is a bit less intense than when it was super fresh which has allowed some additional complexity to shine through.

Roasted coffee, vanilla, milk chocolate and maybe some Cherry skins. Some nuttiness. Finishes dry. Slightly bitter. Nice level of sweetness. It's pretty good. Could be a bit more coffee forward.

Served in a pint glass
Exceptional appearance. The near pitch black liquid was topped by an amazingly tight and creamy, khaki colored crown that rose to be two fingers tall. This almost looked like it came from a nitro tap. The head very slowly fell to a thick cap. A wide, drippy ring of lacing coated the top portion of the glass.
The nose was amazingly coffee forward. Lightly roasted coffee beans came to mind. Super bright and somewhat fruity. While many coffee-infused beers mask the subtleties of quality coffees, the Ethiopian beans in this were definitely apparent. Bit of powdered cocoa. Some milk chocolate too. Sweet cream and vanilla were also noticeable. As the beer warmed, both the coffee and the chocolate intensified. Deep, dark, fudgey notes appeared.
The flavor was equally as impressive. The beer contained the perfect melding of modestly roasty malts and bright coffee notes. Somewhat fruity. Dark cherry was detectable. Some vanilla and sweet cream came through in the center. The beer finished with more roasty notes and just a hint of bitterness. Like the nose, the rich, chocolatey, fudgey notes intensified as the beer warmed. The vanilla really came forth as well.
The mouthfeel was also exceptional. It was surprisingly light and creamy yet uber plush and supple. The liquid contained an incredibly fine, frothy, fluffy effervescence. Pillowy soft on the palate.
Trillium Brewing is best known for their pale ales, IPAs and double IPAs, but many of their dark beers are equally as magical. Coffee-infused American stouts simply do not get any better than this.
