Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our production crew.
For this edition we present a continued experimentation in creating a Lager with a distinctive Trillium feel. Using Saaz in the hop bill and a grist composed of 100% German Pilsner Malt, Perm 21 presents aromas of lemongrass and citrus peel. Medium-light body and crisp carbonation are complemented by flavors of honeysuckle, subtle herbal spice, and sweet tea on the finish. A deviation from our usual habit of heavy hopping, Perm 21 is a refreshing and drinkable take on a Lager.

Poured from a 32 ounce growler into a willibecher. Filled today.
A: Pours a transparent gold and leaves a white head of a finger that fades slowly to a layer atop the beer.
S: Honey, herbal tea, mint, lemon, honeydew melon. Very nice and interesting nose.
T: Honeydew, light biscuit, hint of lemon, floral, honey, grassy. Really nice, balanced and smooth.
M: Low to medium carb, creamy and smooth.
O: Really solid, drinkable beer. Would be a go-to beer if it were more available. Pretty flawless.

32 oz growler filled and enjoyed the same day. I always look forward to trying Trillium’s non-stout/IPA/sours to experience subtlety from a brewery known for big flavors. I loved their take on the blonde ale (Running Naked) for example.
This lager is not subtle.
It’s super-hopped, just not on the hops that dominate the scene today. This baby is all saaz so the flavors of grass, lemongrass and light citrus are through the roof. I get mostly grass; insane amounts of it. Like if I put my face beside a running lawn mower and filled my mouth up with fresh clippings.
Definitely cool to experience such a muscle-bound lager. The beer still manages to feel crisp and refreshing but the weight of the hops certainly pounds the palate.
Cloudy not hazy, spicy and grassy not fruit-forward, crisp lager finish as opposed to their typical ales. Worth a fill, for sure.

From a growler. Pours clear, pale yellow in color with 1/4 inch head. Taste is dough, honey and grass. Sweet with light bitterness, light bodied with moderate carbonation. Solid lager...good for the style. Drinks really easy.

Pours a lovely translucent gold with an off-white head that quickly dissipates into a tight band around the edges. Nose is fairly clean - Saaz and some light floral notes. Taste consistent with nose; however, the flavor profile comes off a bit cleaner. Mouthfeel is light in body with an even carbonation and a clean finish. All and all, a solid beer but a little too one dimensional and lacking any significant depth.
