For this collaboration, we took the grain bill for Trillium's Night & Day and combined it with the flavor sugar and spice additions from Prairie's BOMB! to create TrillBOMB!, which we then aged in bourbon barrels.
Brewed with cacao, coffee, Ancho chilis, and vanilla, Barrel Aged TrillBOMB! has an intense nose of dark chocolate, dark brown sugar and soft vanilla. Sweet flavors of oaky vanilla and hazelnut are rounded out by a subtle warmth from the Ancho chilis.

Deep complexity becomes apparent as the beer opens up, eliciting secondary notes of spicy heat, fresh-ground coffee, figs, and delicate, woody spirit character contributed by bourbon barrel aging. Bottle. Tan head that fades. Black color. Thick, motor oil.
This one is hot and spicy. The peppers are pretty dominant. Can’t get the coffee beyond the roast. Maybe in the finish. Vanilla, cocoa/fudge. Char with chilis. Bourbon blends in with the heat.
Very enjoyable pepper beer! Fun to try.

Collab with Prairie, excited for this. Bottle date smudged and unreadable
Pours inky thick black liquid metal like, stains the glass with some legs as well, no head but not a problem.
Nose is super rich, loads of cocoa, dark chocolate, some roasted malts, coffee, lots of vanilla, toasted oak, heavy coffee cocoa candy with fair sweet aroma, a little nutty almost cashew butter like and hint of hazelnut, nougat, mild smooth alcohol, hint of pepper spice
Taste brings loads of cocoa, dark chocolate, choc ganache, rich thick fudgey chocolate, into some pepper flavor and spice, then plenty of vanilla, rich vanilla spice and a bit overpowering raw vanilla bean, some coffee in the background, as well as roasted malt, smooth but mild alcohol heat, then some cayenne pepper flavor with more spicy heat on the back end, a bit nutty again, hazelnut and candy bar, fair sweetness overall, a hint of bitterness, very little toasted oak, sweet sticky finish, coats the back of the tongue and never seems to go
Mouth is fuller bod, fairly thick and chewy like, lower carb, fair warming alcohol and pepper heat, really sticks to everything in the mouth especially the back of the tongue
Overall mixed, it's a good beer overall, a but overboard on the vanilla and cocoa, pepper was right on, thankfully not too sweet just under pastry stout level, very little barrel though, but rounded well

Pours deep brown. Aroma dominated by the chilies & bourbon. Flavor more complex -- chocolate, vanilla, bourbon, roastiness, ancho chilies with a hint of coffee. Mouthfeel is medium.
