Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew.
For this edition, we present a crisp, refreshing wild ale brewed with fresh apple juice sourced from Lookout Farms in Natick, MA. Perm 14 leads with a nose of toasted oak, bright apple cider, a note of almond macaroons, and an earthiness vaguely reminiscent of Pomerol wines. The palate conjures flavors of white wine, lime, and tart apples complemented by a light, effervescent body.
MALT: Pilsner, Valley Wheat, Valley Triticale, Maine Grains Flaked Triticale, Maine Grains Flaked Rye
HOPS: US Goldings

750ml bottle from 2016 or 2017, drank December, 2019. Poured with a little whiter head that settled quickly, looked like Apple juice. Apple smell and taste predominant but not overpowering like Apple juice (which I was afraid of). Not too tart or acidic, again which I was afraid of, got better as it warmed. Perfect amount of astringency. Mouthfeel was thin, just about right. Really nice beer, aged well.

This one pours a clear light apple cider-colored amber, with a small head, and not much lacing.
This smells like oak, white wine, lemon juice, and apple juice.
This is a touch basic, but tastes decent enough anyway. I don't get a ton of funk, which would help with the big apple juice character. It's not quite shandy level, but I wish it was both more acidic and more funky. I don't usually hope for more acidity with Trillium's wild ales, so take it with a grain of salt.
This is light bodied, with a fairly crisp mouthfeel, and a decent level of drinkability.
This feels a touch pedestrian, but it's still a tasty enough beer.

T - tart apple, cinnamon, clove, apple pie!
M - tart, dry finish
O - at first perhaps a little underwhelming, but as I consume more of it, I’m becomming haunted by its delicate spice notes

Light, golden yellow, not completely hazy but with a settling white head of foam, no lace.
Dry, tart apples on the nose. Slight funk. Lemon citrus to balance. Light but pleasant.
Tart but not too sour. Lots of apple presence with a lemon sour that rounds it out. Pure apple sweetness lingers in the finish.
Crisp, dry, light body. Tart.

Smells a bit leathery, light and grainy with mild spice, some fresh apple juice, lemony citrus, oak barrel, subtle vanilla, hint of straw, toasty hay, and floral earthy herbal grassy hops. Tastes like candied sour apple, tart lemony citrus, grainy malts, toasty hay, straw, some leather, oak barrel, subtle vanilla, mild peppery clove-like spice, and floral earthy herbal grassy hops. Feels medium plus bodied, creamy and slick with smooth moderate carbonation, finishing dry and crisp. Overall a real nice oak foeder aged wild ale brewed with apple juice.
