Collaboration with The Veil Brewing Co., Monkish Brewing Co., Cloudwater Brew Co. and Other Half Brewing Co.
All aboard the collaboration train - our newest five-way stout is loaded up with delicious flavors that bring us back to the whimsical days of sneaking brownies before dinner. This beer utilized a large number of friends (The Veil, Cloudwater, Monkish and Other Half) and a large amount of real nuts, coconut, coffee, and vanilla.
Adjunction Junction pours a thick, deep brown color with above medium haze. Bringing the glass to the nose calls to mind the charred, crunchy edge of a tray of freshly baked brownies followed by notes of vanilla bean, bold cold brew coffee, and pecan-almond brittle. The palate seamlessly layers flavors of caramel-chip cookies and macadamia blondies with charred dark chocolate and soft brownie batter. Adjunction Junction has a slick yet rounded mouthfeel with a medium body and a delightfully sweet finish.
MALT: Pale Malt, Simpson DRC, Caramunich, Dark Wheat, Crystal Malt, Malted Oats, Black Malt
HOPS: Hop Extract

Bottled September, 2018, drank out of a tulip on 03.21.20.
I'm seeing and have heard the reviews to be mixed on this one, but I really enjoyed.
Look - this was the biggest negative for me. It poured a two color - caramel on the top and a darker brown on the bottom - out of the bottle - like two different streams of liquid. Really weird - I thought it was going to be off, but it mixed into a color that favored the caramel side of things and ended up flat with a tiny bit of restlessness on the top - for the most part looked like the sludge you might see in a New York City subway track.
Smell - awesome. Similar to the taste, and the smell was strong enough such that you could really get a sniff with each sip, which I find isn't always the case.
Taste - at a really high level, it tasted a bit like chocolate milk. Zeroing in - I'm thinking the taste was dominated by the nuts - almond and macadamia, maybe some some vanilla as well. If I didn't know the ingredients, I'd almost say there was some lactose in there. No hint of alcohol. The one beer I'd compare it to, call me crazy, is Surly Darkness, but not as good - it's just what popped to mind as I was trying to compare it to something.
Feel - medium.
Overall - Really enjoyed it but I can see why others didn't - you really have to appreciate the milk chocolate and nutty side of things to like it.
Postscript - the above was written after my first 10 oz pour - the second pour was darker in color and less milky in taste and smell. It's almost as if the caramel or vanilla macadamia portion of this beer floated up and the rest settled out and was only poured out for the second half. Weird.

This is another unfortunate Trillium stout that has a cloying sharpness to it that is unpleasant on the way down. It of course delivers chocolatey mocha and nutty cookies, but it's too sweet and thin for me.

An excellent Imperial Stout. So many nuances of flavor - sweetness of coconut and the various nuts (almonds, pecans, and macadamia). Remarkably smooth and easy drinking for a stout this high in ABV (11.2%). A rare treat!

Really unattractive appearance. The beer poured a murky, swampy brown color and much thinner than I anticipated. A small, fizzy, tan crown topped the body and quickly dissolved. Yeast particles could be seen throughout the liquid.
The nose was fantastic. Huge creamed coffee presence. Slightly boozy. Kahlua came to mind. Loads of sweet brown sugar. Some rich, fudgey notes were apparent as well. Touch of coconut. As the beer warmed, the coconut intensified. Vanilla notes also came forth.
The flavor profile was terrific and very similar to the aroma. Rich and malty up front. Big caramel and roasted malt presence. Milky lactose notes were also apparent. Some vanilla too. Bit of coffee. Coffee ice cream perhaps. A touch nutty in the center. More roast and booze on the back end and the finish. Touch of lingering, dry, roasty nuttiness.
The mouthfeel was creamy and fluffy on the palate. Medium-light bodied for the style. The liquid contained a fine, fairly subtle effervescence. The sugars in the beer left a slightly sticky film on my lips.
Adjunction Junction looked rather unappealing and, in this sense, reminded me of another Trillium five-way collaboration stout - Fireplace Bananas. Unlike that beer, however, this one was really enjoyable. All in all, a fantastic dessert-style stout that drinks far too easily for its ABV.
