Permutation is our experimental series of small batch offerings, showcasing the unique visions and innovative concepts developed by our brewing and cellar crew.

Permutation #63 ventures into the world of hoppy wild ales - a balanced, 6.2% ABV beer that marries firm bitterness with funky aged hops and wild yeast character. Pouring a light straw with a vibrant head, aromas of fresh lemon, biscuit, green tea and a touch of funk hit the nose. On the palate, we find floral notes - lemongrass, dandelion, lavender - with a slightly sweet biscuit note following. The complex qualities of the wild yeast culture provide the background for the hoppier qualities of the beer, without expressing too much acidity. Permutation #63 is medium-bodied with lively effervescence and moderate carbonation. A unique progression in our wild cellar's explorations!

Pours a pale gold color, somewhat hazy, with a soapy one finger white head.

Aroma is floral citrus with a moderate amount of funk. Very fresh smelling.

The hops really come out in the taste and compliment the funk well, leading to a nice hybrid flavor of lightly sour apple and grape notes over a pleasant backdrop of ruby grapefruit and lemon blossoms, maybe on the pithy side as it is a bit dry. brewandbbq mentioned a "band-aid" flavor... haha, I think I do get that, so he is right. But hey, who hasn't sucked on a band aid once in a while? Anyone? Um? Seriously though, its fairly background and really is part of the grape/apple thing.

Feel is a little soft but mostly dry with no stickiness. bitterness is low. I don't find the finish overly tart, maybe a tad ascerbic.

This is really interesting and I think offers a great side-track to wild ales by providing a well thought out hop profile. The citrus blossom flavors work well here. As wild ales go this is a gem I think, if you are looking to go outside the lines.

Wow, this one is different. Now reading that it emphasizes hops, I wish I drank it sooner. Still has the qualities of a Wild Ale, just subdued. Carbonation seems to have faded, but plenty of body and a tasty finish. Flavors are mainly apple, grain, and some citrusy qualities. In a way it seems like a pale lager or similar style with some funky yeast added. I dig it!

L — Pours a very slightly hazed straw body with three fingers of pillowy white head produced with very gentle pour. The effervescence on this is insane, easily rivaling Duvel. I’m frankly surprised the bottle didn’t explode, definitely seems like fermentation was actively continuing in bottle far more than anticipated. Fabulous retention and lacing as a result, though.
S — Mild lemony/sulfuric wheat, barnyard funk, gentle floral hoppiness
T — Mild bretty funkiness and just a hint of lemony tartness. Mostly drinks like a witbier, though, which is somewhat unexpected given Trillium’s track record of over-the-top acetic wilds
F — Smooth, easy drinking, and moderately fluffy. Light mouthfeel, well carbonated. Good stuff, feels like 4.5%ABV
O — A wonderfully priced offering from Trillium that drinks surprisingly well and I could see being a great warm weather refresher. If they add some fruit to this base beer you better believe I’d buy it

330ml bottle.

Pours clear yellow with a quickly fizzling head of white. Zero retention or lacing. Aromatics lead off with a rotten apple in a diaper with cheese dust and bandaids. Light bodied with a crisp mouthfeel. Apple juice with grapey funk on the palate with a serious bitterness. Finishes bitter and quite tart.

Not very enjoyable but interesting.
