New Year’s Resolutions are always hard to keep. They are even harder when you attempt to fast from beer for an entire month. Here at Trillium, we have been eagerly looking forward to break our resolutions with a decadent, brunch-inspired imperial stout brewed in collaboration with Burgundian Waffles and Barrington Coffee. For this recipe, we used over 500 pounds of Burgundian’s Liege-style waffles in the mash and then infused the beer with our new Trillium blend cold brew coffee that we developed alongside the master roasters at Barrington.
Resolution Break pours a faintly hazy black with a light brown head and thick, eye catching lacing. Swirling aromas lift from the glass calling to mind Sunday brunch preparations as tantalizing freshly ground dark coffee, warm cocoa, and waffle batter engage the senses. Caramelized pearl sugar and vanilla bean glaze layer on the palate followed a wash of our Trillium blend cold brew revealing roasted nut, dark chocolate bits and subtle earthiness. With above-medium sweetness and soft carbonation, Resolution Break offers a thick, luscious mouthfeel with a subtle hint of spongy waffle on the finish making for a smooth sip that's well worth the wait.
MALT: Pale Malt, Crystal, Flaked Oats, Black (Patent), Chocolate Malt, Munich Malt, White Wheat
HOPS: Hop Extract

On tap. Tan head. Dark brown black color.
Lots of coffee and vanilla. Sweet, but not over the top pastry. Light roast. Lots of chocolate and cocoa. No idea what leige waffles are, but I guess I like them. Full bodied, strong.

2020 Vintage, it pours pitch black color with a 2 finger thick tan/brown colored foamy head that faded slowly and left minimal spotty lacing.
Smells of vanilla, dark chocolate, burnt coffee grinds, molasses, booze like bourbon, brown sugar, cocoa powder, syrup and something very sweet like brownie batter or chocolate chip cookie dough. Very sweet overall with trailing soy sauce or fruit cake, and then the lactose shows up which comes off as chocolate half and half. It lacks any roasted malts and comes off as a sweet pastry stout.
Tastes like vanilla and coffee up front, then it’s followed by dark chocolate, brown sugar, milk chocolate, brownie batter, cocoa powder, chocolate chips or baker’s chocolate, burnt coffee grinds and then a bready flavor like pancake batter with chocolate chips. It’s a bit much in the sugary, chocolate sweetness and the ABV comes off as hot with a mild burn after each sip. It was not as smooth as the other Trillium stouts I’ve had and the lingering molasses and/or chocolate syrup was on the bitter side yet still cloyingly sweet. Sadly the worst beer I’ve had from Trillium, however it was not bad but just not excellent like everything else they make.

Pours a pitch black color with a finger of caramel head. The head leaves a few spots of lacing before settling into a thin halo.
The aroma brings a ton of maple syrup and dark roast malts up front, followed by Belgian waffles, coffee, and milk chocolate. The back end is boozy and full of notes of vanilla and toasted almonds.
The flavor is just sickly sweet and cloying, bringing notes of sweet maple syrup, vanilla and booze with some lingering chocolate and mocha iced coffee. Way too sweet.
The feel is full bodied with low carbonation. Creamy, yet extremely boozy and hot from the alcohol.
Overall, this is just not an enjoyable beer in any sense. It's far too sweet and the alcohol just overwhelms any semblance of balance. Not something I'd even consider trying again.
