A collection of our most fruit forward beers to date, Super Duper Soak's are the next step in our series of Sour Wheat Ales. Focusing on single fruit profiles and pushing passed the fruiting rate of our Super Soak's, these beers offer limitless depth. While still sour, their amped up malt bill serves to moderate the lactic acid formation.
Like our other Soaks, we ferment the base beer with 60% wheat in large oak foeders for several months. Fermentation duties are shared gracefully between our house lactobacillus strain and our Native New England mixed culture. Loosely inspired by the cold-maceration process used in winemaking, we re-ferment fruit in the base beer after primary foeder fermentation to “soak” for a deep extraction of unique colors, aromatics, and flavors.
The first entry into this exciting new series, Blackberries lend this beer a rosey, dark pink hue and create luscious aromas of blackberry pie, mixed berry preserves, and ripe raspberry. The fruitiness of the nose is braced by undertones of wet oak along with a touch of barnyard and earthy funk. A bold palate matches the nose with rounded, deep, and mildly sweet berry flavors. With a medium body and refreshing carbonation, Blackberry Super Duper Soak has a mouthwatering finish that beckons you back for another sip.

Pours a deep purple with abundant violet foamy head that dissipates quickly. Funky, musty, earthy aroma. Very funky, blackberry is prominent, super tart. Good carbonation. Overall an extremely flavorful and funky sour.

Dark berry red appearance, with a minimal fizzy pinkish purple head. Big blackberry, raspberry, wine grape notes, with a strong oak backbone. Thick, creamy, moderately carbonated.

Large, aggressive pink-purple head which recedes within 20 seconds to no bubbles. No lace. The liquid is deep purplish red, almost magenta. Light passes, barely.
Sour nose with some definitive berry notes (more like raspberry than blackberry). Almost undetectable sweetness. Subsequent whiffs brings out a very strong blackberry (almost like a tart pie) aromas. Attractive and unusual.
There's a lemon sourness which lays on top of the blackberry tart flavor. Richer body with an elevated carbonation. No notable wheat. The finish is a repeat of the initial taste--lemon to blackberry slide. Long lip-puckering tart aftertaste.

Unlike most of the beers that I'm rating and reviewing on here in recent months, I traded for this not too long ago. I haven't been up to Trillium in the last year but I'm always game for anything that I can obtain from them. No doubt that this was worth the effort to obtain as it was one of the best American Wild Ales that I've ever had, and on par with the best that Trillium has to offer!
Such a lovely blackberry hue to the liquid as I poured it out as it had a pink and bubbly head to top it off. It settled quite rapidly and unevenly as the middle lasted longer than the portion that touched on my pint glass. Only a few spots were left on my pint glass as they were the weakest link in this highly enjoyable brew. Tons of blackberry, wild yeast, acetate, pie crust, and berry jam in the nose as all of those burst through even more in the taste. Sweet, tart, filling, and fruity, the taste was unreal as the lively carbonation combined with the notes with the end result being a brew that felt like a freshly picked and baked dessert that didn't want to let go of my senses. Yeasty funk, wild berry, and grainy crust combined with loads of freshly-squeezed juice to leave me wanting more once my glass had runneth empty...
There's booze here but it felt like secondary fermentation given how juicy this was and lively the carbonation came across on my palate. American Wild Ales tend to be too funky and bubbly in the end but this one was just a bit more restrained and balanced as it all the high notes and held on for the duration. Really impressed with this as this bottled offering (once again) proved that Trillium was more than a one-trick pony. If you like tart and grainy pastries for a formal dessert, look no further than this beer. This truly was super duper!

Gorgeous appearance. The boysenberry colored body was topped by a fluffy, inch-tall, lavender hued crown that quickly fell to a thin collar. Minimal streaky lacing stuck along the glass. Toward the drink’s end, some small pieces of sediment collected in the bottom of the glass.
The aroma was fantastic. Blackberry and/or boysenberry notes dominated. Boysenberry ice cream came to mind. Maybe some blueberry too. Really fresh and bright. Fairly tart but jammy and sweet as well. A musty quality was also noticeable. Touch of lemony acidity. As the beer sat, the must subsided and more sweetness came forth.
The favor profile was also berry forward but not to the extent of the nose. Blackberry and/or raspberry notes perhaps. Quite tart with a dash of sweetness. Lots of lemon and acidity in the center. Some wheatiness and crackery malt character was noticeable as well. More lingering lemony tartness and acidity on the back end and the finish. Really crisp, dry and refreshing.
Outstanding light, fluffy mouthfeel. Pillowy soft on the palate. The liquid contained a finely beaded, fairly aggressive effervescence that frothed up beautifully.
I usually find Trillium fruited sours to be lacking in fruit character and far too acidic, but Blackberry Super Duper Soak was neither of these. The blackberry was front and center, and the base beer contributed the perfect amount of tartness and funk. I really look forward to trying more beers in this series.

poured from an 11.2oz bottle into a mini snifter. pours a dark maroon with very minimal head. smell is straight blackberry cobbler; amazing. taste lets on a little of the smell but also has some abrasive sourness to it. feel is the most disappointing aspect of this beer by far. thin, not very bubbly. it’s dry, which i’m okay with, but it leaves something to be desired. overall, very fruit-forward sour ale. again, smell is like a fresh baked blackberry dessert and taste comes close to mimicking this but falls a little short.
