The women of Trillium got together once again to participate in Pink Boots Society’s Collaboration Brew Day. The Trillium ladies created a stunning iteration of our Double Seesaw Series. As we all crave for the warm weather, the ladies have brought you a quenching, tropical gose. If this beer doesn’t make you want to run to the beach, we don’t know what will! Our standard Seesaw labels depict a seesaw (or two or three) positioned on a natural angle. We decided to change it up a bit. Level Playing Field shows two balanced seesaws representing the balance of gender at Trillium, and to show how proud we are to work here. When creating this special recipe, the ladies decided on an eye-catching dose of passion fruit, prickly pear, and dragon fruit. Level Playing Field pours an astounding dark pink color with a light haze offering seductive aromas of bright, tropical fruit. Flavors of passion fruit and dragon fruit strike the palate while the prickly pear provides a delightful tartness. Effervescent and medium bodied, Level Playing Field has a moderate level of acidity balanced by a rejuvenating level of salinity.

HOPS: Pink Boots Blend (Loral, Mosaic, Simcoe, Sabro, Glacier)

Pours hazy pinkish-red with a short-lived head of white. Zero retention or lacing. Pungently funky and fruity in the nose. Sulphur, rotting strawberries, iodine, and tannic fruit skins. Light bodied with a thinnish, watery mouthfeel. Strawberry with raspberries and sweet tarts in the nose. Finishes sour, funky, and a bit foul.

This one pours a bright and vivid dark pinkish red color, with a small head, and lots of lacing.
Dragonfruit and passionfruit is almost always a dynamite combo, and it works well here in the aroma, with both coming through strongly. There's less prickly pear, and a light acidity on the nose.
The base gose is basically buried underneath all of the fruit additions. Luckily, the fruit itself is done well, with a significant juiciness and a pretty light tartness. It's crisp and finishes very cleanly, with no lingering acidity or other flavors.
This is light bodied and very drinkable - I could easily have a lot of these. It's very crisp.
This is basically juice, but it's very tasty juice, at least.

The beer poured a gorgeous fuchsia color and was topped by a small, bubbly, bright white film that quickly dropped to a thin, lasting collar. Streaks and dots of lacing stuck along the glass.
The aroma was amazing. There was an intense, exotic tropical fruit presence. Passion fruit dominated. Dragon fruit and prickly pear were also noticeable but came in a distant second and third. Really punchy and bold with a terrific balance of fruity sweetness and crisp tartness.
The flavor profile was impressive but not quite as mind blowing as the nose. Nice tropical fruitiness up front. The dragon fruit and prickly pear might have both surpassed the passion fruit in intensity here. Tart passion fruit notes were definitely apparent though. Lemon notes kicked in mid palate and crescendoed as the beer moved along the palate. Nice crisp, wheaty tartness too. Touch of salinity on the finish. Some dry, earthy hop bitterness appeared after the swallow.
Very solid mouthfeel. Medium bodied for the style. The liquid contained a fine, zippy effervescence that turned creamy and smooth on the palate.
Of all the fruit-infused beers I have tried lately, none had a more astounding aroma than Double Seesaw: Level Playing Field. Also, being a huge fan of passion fruit, this beer particularly blew me away. All in all, an awesome job by the Women of Trillium. I hope to try more of their offerings soon.
